Cupcakes for my son’s 5th birthday!

I cannot believe that today is my son’s 5th birthday!  Where does the time go?  Last night I baked 2 dozen cupcakes to celebrate his birthday with his friends at preschool.  Now that he is five, he specified the flavor (vanilla), the color of icing (turquoise), and the decorations (rainbow sprinkles and disney cars 2 characters).  He also insisted that his cupcake have the car character – Miguel Camino.  After searching the internet for templates to print out, I found these lovely cars 2 cupcake topper templates.  I glued them to a back of a cereal box, and then cut each of them out.  After that, I used tape to attach them to toothpicks. I did need to cut some corners to save some time in baking the cupcakes so I used a two boxes of Trader Joe’s Vanilla Cake and Baking Mix.  I made the icing using this recipe:

Ingredients:  8 oz of cream cheese, 5 tbsp of butter, 2 cups of powdered sugar, 1 tsp of vanilla, and food coloring (2 drops blue and 2 drops green).

I just combined the above ingredients and then placed them in a icing bag with tip and decorated the cupcakes.  Here are photos of my creation:

Not so pretty but tasty deviled eggs

This is my second attempt at making deviled eggs.  Both times they were really delicious; however, I need to research a better technique to presenting them.  A mom friend of mine suggested that I try piping the mixture so may try that next time.  Here are my ingredients and steps:

Ingredients:  4 eggs, 1 tsp mustard, 2 tbsp mayo, 1 chopped pickle spear, 1 tbsp of chopped pickled jalepenos, dash of salt and pepper, half tsp cumin powder, half tsp turmeric powder

Steps: Boil 4 eggs for 20 minutes, peel off shells once cool; cut eggs in half; take out yolks and place in a separate bowl; add above ingredients and mash together (or blend).  Scoop or pipe egg mixture onto cooked egg whites.

I love chutney sandwiches!

Today, I had a craving for a chutney sandwich that my mother used to make for me as a child. Chutney is so easy to make because you just have to blend the raw ingredients together in a blender or food processor. It can be spicy or mild as you want depending on what type and quantity of peppers you use. There are many variations and recipes for chutney but here is the recipe that I made today:

These are the ingredients that I used for my chutney: 1 cup mint leaves, 2 cups cilantro, 2 garlic cloves, 1 sq inch of fresh ginger, half cup of peanuts, walnuts, almonds, or cashews (I used walnuts), 2 green chili peppers, 2 tbsp lemon juice, and 1 tsp salt.  You can also add a little water or olive oil to thin out the chutney before you blend it all together.

To make the chutney sandwiches, spread the chutney on two slices of bread and add slices of tomatoes and cucumber.  Delicious!

I created this blog to explore my obsession with food, cooking, Brooklyn, and being a mom of a picky eater.  My posts will include successful or not so successful cooking experiments, new foodie places to check out in Brooklyn and beyond, dealing with my son’s picky eating habits, and anything else that may or may not relate to anything listed above.  I also hope to archive my mom’s Indian food recipes that she learned as a child but never wrote down.  I’ve been thinking about writing a blog for quite some time but could never figure out what would be something that I could write about without getting bored of the subject matter.  Let’s see what happens…
