I love chutney sandwiches!

Today, I had a craving for a chutney sandwich that my mother used to make for me as a child. Chutney is so easy to make because you just have to blend the raw ingredients together in a blender or food processor. It can be spicy or mild as you want depending on what type and quantity of peppers you use. There are many variations and recipes for chutney but here is the recipe that I made today:

These are the ingredients that I used for my chutney: 1 cup mint leaves, 2 cups cilantro, 2 garlic cloves, 1 sq inch of fresh ginger, half cup of peanuts, walnuts, almonds, or cashews (I used walnuts), 2 green chili peppers, 2 tbsp lemon juice, and 1 tsp salt.  You can also add a little water or olive oil to thin out the chutney before you blend it all together.

To make the chutney sandwiches, spread the chutney on two slices of bread and add slices of tomatoes and cucumber.  Delicious!

  2. Chutney sandwiches- I could live off of them! One of my fav things in Mumbai off the carts! THey always put beets and slices of boiled potato on them too! Need to do your mom’s dohkla and chicken biriyani recipe! I need to get my mom’s eggplant parmesan recipe for you. Keep forgetting!
