Cupcakes for my son’s 5th birthday!

I cannot believe that today is my son’s 5th birthday!  Where does the time go?  Last night I baked 2 dozen cupcakes to celebrate his birthday with his friends at preschool.  Now that he is five, he specified the flavor (vanilla), the color of icing (turquoise), and the decorations (rainbow sprinkles and disney cars 2 characters).  He also insisted that his cupcake have the car character – Miguel Camino.  After searching the internet for templates to print out, I found these lovely cars 2 cupcake topper templates.  I glued them to a back of a cereal box, and then cut each of them out.  After that, I used tape to attach them to toothpicks. I did need to cut some corners to save some time in baking the cupcakes so I used a two boxes of Trader Joe’s Vanilla Cake and Baking Mix.  I made the icing using this recipe:

Ingredients:  8 oz of cream cheese, 5 tbsp of butter, 2 cups of powdered sugar, 1 tsp of vanilla, and food coloring (2 drops blue and 2 drops green).

I just combined the above ingredients and then placed them in a icing bag with tip and decorated the cupcakes.  Here are photos of my creation:
